Oat Honey Cookie

Oat Honey Cookie

Ingredients

  • ½ cup butter

  • 1 cup sugar

  • 2 large eggs

  • ⅓ cup honey

  • 1½ cup cooking oats

  • 1¼ cup flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 cup chocolate chips

  • ½ cup coconut flakes

Directions

  1. Preheat oven to 325°F

  2. Line a baking sheet with parchment paper

  3. Using a mixer, beat the butter, honey, and sugar together until light and fluffy, about 3 minutes

  4. Add in the eggs and mix until combined

  5. Set aside

  6. In a medium bowl, whisk the flour, baking soda, and salt together

  7. Add the dry ingredients to the wet ingredients and mix until just combined

  8. Fold in the oats, coconut flakes and chocolate chips

  9. Scoop the dough (about 1 large spoonful) onto the prepared sheet pan. Leave about 2” space between

  10. Bake for 14-18 minutes until the edges of the cookies are golden and the centers are set

  11. Allow cookies to rest and cool on the sheet pan for 2-3 minutes

  12. Transfer to a wire rack to fully cool
