Oat Honey Cookie
Ingredients
½ cup butter
1 cup sugar
2 large eggs
⅓ cup honey
1½ cup cooking oats
1¼ cup flour
1 tsp baking soda
1 tsp salt
1 cup chocolate chips
½ cup coconut flakes
Directions
Preheat oven to 325°F
Line a baking sheet with parchment paper
Using a mixer, beat the butter, honey, and sugar together until light and fluffy, about 3 minutes
Add in the eggs and mix until combined
Set aside
In a medium bowl, whisk the flour, baking soda, and salt together
Add the dry ingredients to the wet ingredients and mix until just combined
Fold in the oats, coconut flakes and chocolate chips
Scoop the dough (about 1 large spoonful) onto the prepared sheet pan. Leave about 2” space between
Bake for 14-18 minutes until the edges of the cookies are golden and the centers are set
Allow cookies to rest and cool on the sheet pan for 2-3 minutes
Transfer to a wire rack to fully cool
